FOOD AS MEDICINE: Bone Strengthening Plant-Based Foods

Highlights and Hacks:

  • Osteoporosis is not necessarily a permanent condition.  Because bones are a living tissue (breaking down old bone and creating new bone), with appropriate nutrition and lifestyle practices, you could eliminate pain and increase mobility and strength of bones and joints.  
  • There are many conflicting and confusing information sources about soy and cancer risk.  Two expert sources indicate the benefits may outweigh the risks.
  • The calcium in dairy foods is out of balance with phosphorus, so much of it will be incompletely absorbed or incorrectly assimilated. In addition, the high protein content in dairy products triggers the release of calcium from the bones to buffer the acidity. A National Dairy Council study confirmed this. Researchers supplemented a test group with three 8–ounce glasses of milk a day, which significantly increased bone fracture rates compared to a control group that didn’t receive the supplementation. The researchers concluded the rise in fractures was most likely due to a 30% increase in protein intake from cow milk (Recker & Heaney, 1985). 
  • PCRM reports …” The most healthful calcium sources are green leafy vegetables and legumes, or “greens and beans” for short. Broccoli, Brussels sprouts, collards, kale, mustard greens, and other greens are loaded with highly absorbable calcium and a host of other healthful nutrients. The exceptions are spinach and Swiss chard, which contain lots of calcium but tends to hold onto it very tenaciously, so that you will absorb less of it.
